An apple introduced in 1906 by J Cheal, who designed the gardens for William Astor, has made a tasty debut on the menu at Hever Castle this week.
Hever Castle’s Head chef Les Woolven was gifted a batch of ‘Encore’ apples from Anne Boleyn’s Orchard earlier this month, and with a dash of inspiration and a pound or two of apples he has created delectable ‘Caramelised Apple Sausage Rolls’.
‘Encore’ is a bright greeny-yellow cooking apple with creamy white flesh, a distinct ribbing and a flattened base. This particular apple variety is known for making a soft baked apple with a rich flavour.
First recorded in 1906 and raised by Charles Ross, Head Gardener at Welford Park in Berkshire, ‘Encore’ was introduced by J Cheal of Crawley, Sussex. The apple received the RHS Award of Merit and 1906 along with the RHS First Class Certificate in 1908.
