George Blogg – Culinary Director

Leading the vision for Eden is acclaimed chef George Blogg, one of Britain’s most respected figures in modern hospitality.

George’s journey into professional kitchens followed an unconventional path. After completing a degree and master’s degree at The University of Manchester, he pursued his passion for food and built an extraordinary culinary career through some of the UK’s finest Michelin-starred restaurants, including The Square in London and Le Champignon Sauvage in Cheltenham.

As Executive Chef at Gravetye Manor in West Sussex, George achieved nine consecutive years of Michelin-star recognition and earned numerous industry accolades, including the prestigious Master of Culinary Arts (MCA) award from the Royal Academy of Culinary Arts. His commitment to excellence extends beyond the kitchen, mentoring future generations of chefs and serving as a judge for several leading culinary competitions.

At Eden, George brings his distinctive philosophy of seasonal, ingredient-led cooking, drawing inspiration from the estate’s gardens, local producers and the surrounding Kent countryside. His vision is to create a restaurant that celebrates exceptional produce, genuine hospitality and a memorable sense of place.

Adam Smith – Executive Head Chef

Working closely alongside George is Executive Head Chef Adam Smith, whose impressive career has taken him through some of Britain’s most celebrated kitchens.

Adam’s experience includes roles at Claridge’s in London, Lords of the Manor in the Cotswolds, Le Champignon Sauvage in Cheltenham and Gravetye Manor in West Sussex, where he worked alongside George for more than six years.

Known for his meticulous attention to detail, strong leadership and unwavering commitment to quality, Adam plays an integral role in shaping the dining experience at Eden. His dedication ensures consistency, refinement and creativity across every menu, while fostering a positive and collaborative kitchen culture.

Ella Kessell – Front of House Manager

Creating memorable guest experiences is at the heart of Front of House Manager Ella Kessell’s approach to hospitality.

Ella has developed her career through a genuine passion for welcoming guests and ensuring every visit feels special. Known for her warm, attentive and thoughtful style, she takes pride in guiding guests through their Eden experience from the moment they arrive.

Her focus is on creating an atmosphere that feels both sophisticated and relaxed, delivering impeccable service while ensuring every guest feels comfortable, valued and genuinely cared for.

Matthew Bradford – Sommelier

Eden’s carefully curated wine programme is led by Sommelier Matthew Bradford, whose international career has taken him across Europe, North America and Asia.

Beginning his hospitality journey in Paris, Matthew has since worked in Toronto, London, Hong Kong and Shanghai, developing extensive knowledge of wines, global cuisines and diverse food cultures.

A long-standing advocate of sustainable, organic and biodynamic viticulture, Matthew’s passion for environmentally conscious winemaking has influenced his approach throughout his career. He is particularly passionate about building relationships with wine producers, many of whom he has known and worked with for decades.

At Eden, Matthew has assembled a wine collection designed to complement George and Adam’s menus, offering guests carefully considered pairings that enhance every dining experience.

Tom Surgey – Drinks Consultant

Supporting Eden’s drinks programme is renowned wine expert and hospitality consultant Tom Surgey.

Tom is co-founder of the Prept Foundation and Table Talk Business Club, a respected television wine presenter and author of How to Drink Wine. He is a familiar face to many through appearances on ITV’s Love Your Weekend and This Morning, as well as through live events alongside some of the UK’s best-known wine personalities.

His hospitality career began in restaurants, including London’s iconic Ivy and Ivy Club, before moving into senior roles within the wine industry. Today, Tom works with premium drinks brands while remaining a passionate advocate for hospitality and professional development within the sector.

His expertise helps shape Eden’s drinks offering, ensuring it reflects both quality and innovation.
